Step by step recipe
The secret to this dessert is proper gelatin handling and layering. Soak gelatin in cold water, then dissolve it in warm cream to avoid lumps. The first layer is whipped with mascarpone for airiness, the second with cocoa for contrast. Each layer must be chilled completely before adding the next — this ensures clean, defined layers and a perfect texture.

Prep the gelatin
Soak gelatin (30 g / 2 tbsp) in 180 ml (¾ cup) of cold water, stir, and let bloom for 10–15 minutes.

Make the cream base
Dilute heavy cream (150 g / ⅔ cup) with 150 ml (⅔ cup) of water, add sweetener (6 g / 1 tsp), and warm to about 40°C (104°F). Split into two equal parts (about 180 ml each).

Dissolve the gelatin
Heat the bloomed gelatin until fully dissolved (do not boil). Divide equally and stir into each of the two warm cream mixtures.

Make the white layer
To one half, add mascarpone (250 g / 8.8 oz) and beat with a mixer until smooth. Pour into molds and refrigerate for 1 hour to set.

Make the chocolate layer
To the second half, add cocoa powder (5 g / 1 tsp) and mix until dissolved. Cool to room temperature.

Add the chocolate layer
Remove the molds from the fridge, gently pour the chocolate mixture over the set white layer, and return to the fridge for 1–2 hours until fully set.

Choose quality mascarpone
Use fresh mascarpone with 30–40% fat for the creamiest, velvety texture.
Handle gelatin correctly
Soak gelatin in cold water (1:6 ratio) for 10–15 minutes. Heat until dissolved, but never boil — it destroys the gelling properties.
Chill each layer before adding the next
The white mascarpone layer must be fully set (at least 1 hour) before adding the cocoa layer. Otherwise, the layers will merge.
Garnish before serving
Top with cocoa powder, chocolate curls, or fresh berries for a beautiful finish.
SUBSTITUTIONS
Add your taste
- Replace mascarpone with ricotta or cream cheese If mascarpone is unavailable, use ricotta or soft cream cheese — the texture will be slightly grainier but still delicious.
- Use honey or agave syrup instead of sweetener Add 30 g (1.5 tbsp) of honey or agave for natural sweetness — this will increase carbs slightly.
- Add vanilla or lemon zest Stir in vanilla extract or lemon zest to the white layer for extra aroma.
- Fruit option instead of cocoa Replace cocoa with berry purée (raspberry, strawberry) for a fruity mascarpone jelly.
HOW TO STORE
How to Store Mascarpone Jelly
Keep the jelly refrigerated in airtight molds or covered with plastic wrap for up to 3 days. Let sit at room temperature for 5–10 minutes before serving. Freezing is not recommended — the texture becomes watery upon thawing.
