For perfectly firm gummies, dissolve the gelatin properly without boiling. Sparkling water adds a light fizz, while sweetener gives a pleasant sweetness. Pour into a mold, let it cool, and refrigerate for 1–2 hours. Follow these steps for perfect homemade gummies.

Pour 100ml of cold sparkling water over the gelatin and let it soak for 5–10 minutes (for sheet gelatin, soak in water).

Dissolve the Gelatin

Microwave the gelatin on medium power in short 15–20 second bursts, stirring each time, until fully dissolved. Do not boil.

Mix with Sparkling Water

Add the remaining sparkling water (400ml) to the gelatin mixture. Stir in the sweetener and mix until well combined.

Use Quality Gelatin

Choose high-quality powdered or sheet gelatin for the best texture. Powdered gelatin should be soaked in a little cold water before heating. Sheet gelatin should be soaked for 5–10 minutes, then squeezed and dissolved.

Don't Boil the Gelatin

Boiling destroys the gelling properties. Heat it in short microwave bursts at medium power, stirring each time, until fully dissolved.

Choose a Shallow Mold

For easy slicing, use a rectangular or square mold with 1-inch sides. Silicone molds are also great for easy release.

Let It Set Completely

After cooling in the fridge, leave the marmalade for at least 1–2 hours, preferably overnight. It becomes firmer and easier to cut into neat cubes.

How to Store Gummy Marmalade

Store in the fridge in an airtight container for up to 5 days. You can also keep it at room temperature in a dry place, but it may become sticky. Do not freeze — the texture becomes grainy upon thawing. Before serving, you can toss the cubes in sweetener or cornstarch to prevent sticking.
