SIMPLE PROCESS
Step by step recipe
For perfect meringue, make sure your egg whites are at room temperature and all equipment is completely clean and grease-free. Whip to stiff, glossy peaks, adding the sweetener gradually. Dry in the oven at a low temperature (90–100°C) for 60–90 minutes, depending on size. The meringue is ready when it easily lifts off the parchment and feels crisp.

Prep Ingredients
Take the egg whites out of the fridge 30 minutes before starting to bring them to room temperature. Measure the sweetener and lemon juice. Ensure your bowl and beaters are completely dry and grease-free.

Whip the Whites
Begin beating the egg whites on medium speed until frothy. Add the lemon juice and continue beating.

Add Sweetener
Gradually add the sweetener, 1 teaspoon at a time, while beating. Increase speed to high and whip until stiff, glossy peaks form (about 5–7 minutes).

Shape the Meringues
Line a baking sheet with parchment paper. Using a piping bag or a spoon, drop small portions of the meringue mixture onto the paper, spacing them apart, creating swirls or rounds.

Dry in the Oven
Preheat the oven to 90–100°C (200–210°F). Place the baking sheet in the oven and dry the meringues for 60–90 minutes, depending on size. After 1 hour, check for doneness: they should lift off the paper easily and feel crisp.

Cool and Serve
Turn off the oven and leave the meringues inside to cool completely (keep the door closed). Then carefully peel them off the paper and serve. Store in a dry, airtight container.
CHEF'S TIP
Use Only Clean, Dry Bowls
Even a drop of fat or water will prevent egg whites from whipping properly. Wipe your bowl and beaters with lemon juice or vinegar before starting.
Add Sweetener Gradually
Sprinkle the sweetener in small batches while continuing to beat, so it dissolves fully and the mixture becomes glossy.
Dry at Low Temperature
Meringue is dried, not baked. Keep the temperature below 100°C to avoid browning and maintain the pure white color.
Don't Open the Oven Early
Opening the oven during the first 40 minutes can cause the meringue to collapse. Only check after the minimum drying time.

Add your taste
- Vanilla-Flavored Add ½ teaspoon of vanilla extract or a pinch of vanillin for a sweet, aromatic twist.
- Chocolate Meringue Fold 1 tablespoon of unsweetened cocoa powder into the finished mixture for a chocolate version.
- With Nuts Gently fold in 1 oz (30g) of finely chopped almonds or walnuts for extra crunch.
- With Liquid Stevia Use liquid stevia (a few drops) instead of powdered sweetener for zero carbs and calories.
HOW TO STORE
How to Store Low-Carb Meringue
Cool the meringue completely in the turned-off oven. Store in an airtight container or a glass jar with a tight lid at room temperature in a dry place for up to 2 weeks. Do not refrigerate — moisture will make it sticky. If it becomes soft, re-dry it in the oven at 80°C (175°F) for 10–15 minutes.
