Step by step recipe
The secret to this recipe is proper marinating and roasting in a bag. Coat the chicken thighs thoroughly with spices and let them rest in the fridge for at least an hour – this allows the flavors to penetrate the meat. The roasting bag creates a steaming effect, preserving moisture and making the meat incredibly tender. Avoid overcooking: bake at 180°C (350°F) for 40–60 minutes depending on size. Follow our steps for perfect chicken every time.

Prepare the chicken thighs
Rinse 1000 g (2.2 lb) chicken thighs under cold water, pat dry with paper towels. Trim any excess skin or fat if desired.

Rub with spices
In a bowl, mix 30 g (about ¼ cup) of your favorite spice blend (paprika, garlic, thyme, pepper, salt). Rub each thigh thoroughly on all sides, working the spices into the skin.

Marinate in the refrigerator
Place the thighs in a container or bowl, cover with a lid or plastic wrap, and refrigerate for at least 1 hour (2 hours or overnight for best results).

Transfer to a roasting bag
Place the marinated thighs into a roasting bag of appropriate size. Secure the ends with a tie or clip. Make 2–3 small slits in the top of the bag to allow steam to escape.

Bake in the oven
Preheat oven to 180°C (350°F). Place the bag on a baking sheet and put it in the oven. Roast for 40–60 minutes, depending on the size of the thighs, until golden brown and cooked through.

Serve
Carefully remove the thighs from the bag, transfer to a serving platter. Pour the pan juices over the meat and serve hot with rice, potatoes, or vegetables.

Choose fresh or thawed thighs
Fresh or properly thawed thighs are best – they are juicier and marinate faster. Thaw frozen ones in the fridge.
Use a generous spice blend
Chicken thighs absorb flavors well. Use a mix of paprika, garlic powder, thyme, rosemary, and black pepper. Add a pinch of turmeric for color. Season with salt to taste.
Marinate for at least one hour
For maximum flavor, refrigerate the thighs covered for at least 1 hour, preferably 2 hours or overnight.
Poke a few holes in the bag
Make 2–3 small slits in the top of the bag before baking to release steam – this prevents bursting and helps with browning.

- No roasting bag? Use a covered dish If you don't have a bag, roast in a deep dish covered tightly with foil or a lid, uncovering for the last 15 minutes to brown.
- Add vegetables to the bag Add potatoes, carrots, or onions to the bag for a complete one-pan meal.

How to store baked chicken thighs
Cool the cooked thighs to room temperature, transfer to an airtight container, and refrigerate for up to 3 days. Reheat in the oven at 160°C (325°F) for 10–15 minutes or in a microwave. Freeze in portion containers for up to 2 months – thaw in the fridge and reheat in the oven.
