Step by step recipe
The key to this dish is perfectly cooked turkey. Don’t overcook it – keep it moist and tender. Let the meat cool before slicing to prevent crumbling. Feta adds creaminess, while dill brings freshness. A drizzle of sunflower oil enriches the flavor, but you can swap it for olive oil.

Boil the Turkey
Bring about 1 liter of water to a boil in a pot, add salt to taste. Add the turkey fillet (125 g / 4.5 oz) and cook over medium heat for 30–40 minutes until fully done.

Cool and Slice the Meat
Remove the turkey from the water and let it cool for 10 minutes. Then slice it into small cubes or thin strips against the grain.

Prepare the Cheese and Herbs
Cut feta (90 g / 3.2 oz) into 1 cm (½ inch) cubes. Finely chop fresh dill (5 g / 0.2 oz), using only the leaves.

Combine All Ingredients
In a bowl, combine the sliced turkey, feta, and dill. Drizzle with sunflower oil (10 g / 0.4 oz), season with salt and pepper if desired, and toss gently.

Serve
Divide the salad among plates. Garnish with a dill sprig or a lemon wedge. Serve with whole-grain bread for a complete meal.

Cook Turkey in Salted Water
For juiciness, add salt and a bay leaf to the water. Simmer the fillet for 30–40 minutes over low heat. Check doneness with a knife – the juices should run clear.
Cool Before Slicing
Hot turkey is hard to slice neatly – it will crumble. Let it cool at room temperature for 10–15 minutes, then cut against the grain.
Choose Quality Feta
Feta is a brine cheese with medium saltiness – it pairs well with meat. If using a saltier cheese (like brined cheese), reduce salt when boiling.
Add Dill at the End
Dill provides freshness but loses aroma when heated. Stir it in only after the salad has cooled completely to keep its vibrant taste.
