The key is dissolving the gelatin without boiling — overheating destroys its setting properties. Use freshly squeezed lemon juice for the best flavor and nutrition. Grind the sweetener into powder so it dissolves completely. Pour into silicone molds — they release easily without greasing.

CHEF'S TIP

Use Fresh Lemon Juice

For the brightest flavor and natural tartness, use fresh lemon juice, not concentrated from a bottle. It makes a big difference.

Dissolve Gelatin Properly

Heat the mixture just until the gelatin dissolves (about 50–60°C), do not boil. Overheating will prevent the candy from setting.

Experiment with Flavors

Try orange, lime juice, or berry puree instead of lemon. Add natural food coloring (beet juice, turmeric) for colorful gummies.

Let It Set Fully

Refrigerate for at least 1–2 hours, ideally overnight. The gummies will become firm and pop out of the molds easily.

Add your taste

  • With Other Citrus Juices Replace lemon juice with orange or grapefruit juice for a different flavor. You can also mix several juices.
  • With Berry Puree Use 100g of raspberry or strawberry puree instead of lemon juice for a fruity, naturally colored version.
  • Add Vanilla Add a few drops of vanilla extract to the mixture for extra aroma. Lemon zest also works well.
  • With Agar-Agar Instead of Gelatin Use 5g of agar-agar instead of gelatin — it sets at room temperature but requires boiling. Follow the package instructions.

HOW TO STORE

How to Store Homemade Gummy Candy

Store in an airtight container in the fridge for up to 5 days. You can also keep them at room temperature in a dry place, but they may become sticky if exposed to humidity. Do not freeze — the texture becomes grainy upon thawing.
