The key is to avoid overcooking the broccoli. Cook the florets and chopped stems only until the water comes back to a boil, then cool them quickly in cold water. This helps preserve a fresher vegetable flavor and brighter color before blending the broccoli with cream and seasonings.

Prepare the broccoli
Trim and wash the broccoli thoroughly. Separate it into small florets. The stems can also be used: peel away the tough outer layer and cut them into small cubes.

Cook the broccoli
Bring a pot of water to a boil and add the prepared broccoli. Cook until the water comes back to a boil. As soon as it reaches a second boil, turn off the heat so the broccoli does not overcook.

Cool the vegetables
Immediately remove the broccoli from the hot water and transfer it to cold water. Cool it for a few minutes, then drain thoroughly.

Blend the soup
Transfer the broccoli to a blender. Add the cream, ground nutmeg, and salt. Blend until completely smooth and creamy, with no large pieces remaining.

Serve hot
Pour the creamy soup into serving bowls and serve immediately. If desired, garnish with grated cheese, small pieces of cooked chicken, or crispy bacon.

There is no need to discard the stems. Peel away the tough outer layer, cut the stems into small cubes, and cook them together with the florets.
Do not overcook the broccoli
Once the water returns to a boil after adding the broccoli, you can turn off the heat. The short cooking time helps preserve the vegetable's fresh flavor and color.
Cool it quickly
Transfer the cooked broccoli to cold water immediately. This stops the cooking process and helps prevent the vegetables from becoming overly soft and watery.
Blend until completely smooth

- Make it lighter Replace some of the cream with milk for a lighter version. The soup will be less rich but will still have a pleasant creamy texture.

How to Store Creamy Broccoli Soup
Cool the finished soup and transfer it to an airtight container. Refrigerate for up to 2–3 days. The soup can be frozen, although the texture may become slightly less smooth after thawing because of the cream. Thaw it in the refrigerator, then warm gently and blend again if needed.
