The key to this dessert is finely grated cheese. Grate the Adyghe cheese on the finest grater until it forms a paste-like consistency—this ensures a velvety texture. Coconut flakes add texture and a tropical aroma, while cream makes the mixture softer. Use a high-quality sweetener like stevia to keep calories low. Chilling in the fridge for at least 30 minutes is essential for setting. Serve well chilled.

Grate the Cheese
Grate 300 g (10.6 oz) of Adyghe cheese on a fine grater into a large bowl. Aim for a uniform, fine shred.

Add Coconut Flakes and Cream
Add 20 g (0.7 oz) coconut flakes, 30 g (about 2 tbsp) cream, and 1 g (about ¼ tsp) of stevia sweetener.

Mix Thoroughly
Mix all ingredients with a spoon or spatula until you get a smooth, paste-like consistency with no lumps.

Divide into Molds
Divide the mixture into 2–4 small molds (silicone or ramekins). Press down and smooth the surface.

Chill in the Fridge
Place the molds in the refrigerator for at least 30 minutes to set. For best results, chill for 1–2 hours.

Serve
Remove from the fridge, and if desired, garnish with extra coconut flakes, berries, or mint. Serve chilled.

Choose Fresh Adyghe Cheese
The cheese should be soft, without sourness, with a delicate texture. It grates easily and creates a creamy base. If too wet, drain in a sieve for 10 minutes.
Grate on a Fine Grater
For perfect smoothness, use the finest grater (like for Parmesan). This prevents lumps and makes the mass airy.
Adjust Sweetness to Taste
If using stevia powder, 1 gram is enough as it's very sweet. You can also add a drop of vanilla extract for extra aroma.
Don't Rush the Chilling
The mixture needs to firm up well to hold its shape. If taken out too early, it will be too soft. For best results, chill for 1–2 hours.
