To make perfect cheese pancakes, it's important to choose the right cheese — it should have 45–50% fat to give the right meltiness and flavor. Grate the cheese finely to get a smooth batter. Don't overmix the batter — just combine the ingredients to keep the pancakes airy.

Prepare the cheese
Grate the cheese on a fine grater. The finer the shreds, the smoother and more uniform the batter. If using several types of cheese, mix them — the flavor will become deeper and more interesting.

Mix with eggs
Add the eggs to the cheese and mix thoroughly with a fork or whisk until smooth. The consistency should resemble thick sour cream — not runny, but not too dry. If the mixture is too runny, you can add a little flour (1–2 tbsp) to thicken it.

Add spices
Season with salt and pepper to taste. Be careful with salt — cheese is already salty. For a spicy kick, add a pinch of dried garlic or sweet paprika.

Fry the pancakes
Heat a skillet with vegetable oil over medium heat. Drop the cheese mixture by spoonfuls, forming small round pancakes. Cover the skillet with a lid and fry for 3–5 minutes until the bottom is golden brown.

Flip and finish cooking
Carefully flip the pancakes with a spatula and fry on the other side for another 2–3 minutes without a lid, until golden brown. The cheese pancakes should be fluffy and appetizing.

Serving
Place the finished cheese pancakes on a plate lined with paper towels to remove excess oil. Serve hot with sour cream, yogurt, or your favorite sauce.
