SIMPLE PROCESS
Step by step recipe
The secret to perfect egg nests is stiff, glossy egg whites that hold their shape. Make sure your bowl and beaters are completely dry and grease-free, and not a drop of yolk gets into the whites. Bake at 350°F (180°C) for just 7–10 minutes – the whites should set, the cheese melt, and the yolk stay slightly runny. Carefully place the yolks in the center before baking for the classic presentation.

Separate the Eggs
Carefully crack 2 large eggs (110 g) and separate the whites from the yolks. Place each yolk in a small ramekin and put the whites in a large, clean, dry mixing bowl.

Whip the Whites
Add a pinch of salt to the egg whites and beat with an electric mixer on medium speed until stiff, glossy peaks form – about 5–7 minutes. The mixture should hold its shape firmly.

Prep the Baking Sheet
Line a baking sheet with parchment paper or a silicone baking mat. No greasing is needed – the whites won't stick.

Form the Nests
Spoon the whipped whites onto the prepared sheet, shaping them into two nests with a slight well in the center. Build up the edges a bit.

Add Cheese and Yolks
Sprinkle the grated semi-hard cheese (100 g / 3.5 oz) over each nest. Carefully slide a yolk into the well of each nest.

Bake
Bake in a preheated oven at 180°C (350°F) for 7–10 minutes, until the cheese is melted and golden and the whites are set but the yolk remains slightly runny.

Separate Eggs Carefully
Crack each egg into a small bowl first, then transfer the white to the mixing bowl. This prevents any yolk from contaminating the whites and ruining the whip.
Use Spotless Equipment
Wipe your bowl and beaters with lemon juice or vinegar, then dry thoroughly – this removes any grease and helps the whites reach stiff peaks.
Don't Overbake
Check for doneness when the cheese is golden and bubbly. If the whites are browning too fast but the yolk is still runny, they're ready. Overbaking makes the whites rubbery.

Add cooked bacon bits, sautéed spinach, or sun-dried tomatoes under the cheese for extra flavor and texture.

How to Store Egg Nests with Cheese
These nests are best enjoyed fresh – they're at their fluffiest and most flavorful. If you have leftovers, cool them to room temperature and store in an airtight container in the fridge for up to 1 day. Reheat in the microwave for 20–30 seconds or in the oven at 300°F (150°C) for 5 minutes. Do not freeze – the whites become watery and lose their texture.
