SIMPLE PROCESS
Step by step recipe
The key is getting the cheese mixture right. Grate the Adyghe cheese finely for a paste-like consistency. The butter should be softened, not melted, so the dough is easy to roll. Flavoring is optional but adds a nice touch. Shape the balls with slightly wet hands to prevent sticking, and coat generously in coconut flakes. Chill for at least 1 hour.

Grate the Adyghe Cheese
Grate 500 g (about 2.2 cups) of Adyghe cheese on a fine grater into a large bowl. If wet, press out excess liquid.

Add Butter and Sweetener
Add 180 g (¾ cup + 1 tbsp) softened butter and 25 g (about 5 tsp) granulated sweetener. Pour in 15 g (1 tbsp) water and 4 g (1 tsp) flavoring (optional). Mix thoroughly until smooth.

Shape into Balls
Wet your hands with cold water. Pinch off small pieces and roll into balls about 1.5 inches in diameter.

Coat with Coconut
Place 30 g (about ⅓ cup) coconut flakes in a separate bowl. Roll each ball generously in the flakes, pressing gently.

Chill Until Set
Arrange the balls on a plate or in a container lined with parchment. Refrigerate for at least 1 hour to set. Serve chilled.
CHEF'S TIP
Choose Fresh Adyghe Cheese
Use fresh, soft cheese without sourness. If it's too wet, drain in a sieve for 10–15 minutes to remove excess whey.
Bring Butter to Room Temperature
Take butter out of the fridge an hour ahead. It should be soft but not melted for a pliable mixture.
Shape with Wet Hands
Dampen your hands with cold water before rolling — the mixture won't stick, and the balls will be neat.
Chill Properly
Don't rush; let them sit in the fridge for at least 1 hour. Longer chilling makes them firmer and easier to handle.

Add your taste
- Replace Adyghe Cheese with Ricotta or Cream Cheese Ricotta gives a lighter texture, while cream cheese makes it denser. Both work well and keep it creamy.
- Use Nut Coating Instead of Coconut Roll the balls in crushed walnuts, almonds, or sesame seeds for a crunchy twist.
- Add Cocoa or Chocolate Chips Mix 1–2 tablespoons of cocoa powder or chopped dark chocolate into the mixture for a chocolate version.
- Make a Dairy-Free Version Substitute Adyghe cheese with soft tofu and butter with coconut oil — the texture remains good, though flavor changes slightly.

How to Store Coconut Cheese Balls
Store in an airtight container in the fridge for up to 5 days. They stay firm and creamy. Freeze portions for up to 2 months; thaw in the fridge for 2–3 hours. Let sit at room temperature for 10 minutes before serving for a softer texture.
