Recipe preparation
Preheat the oven. Heat a tablespoon of olive oil in a pan.
Add the garlic and cook until transparent.
Top with broccoli, red pepper, salt and pepper.
Cook for a minute.
Pour in 2 tablespoons of water, cover and cook until broccoli is browned
Cool it down.
Whisk the eggs in a large bowl.
Add cooled broccoli to eggs. Stir
Heat 1 tablespoon oil in a skillet over medium heat and pour over the mixture
Cook for about 3-4 minutes, until the edges seize.
Sprinkle with cheese and place in a preheated oven on a medium wire rack for 8-10 minutes
Remove from oven and top with additional cheese and ground pepper
