SIMPLE PROCESS
Step by step recipe
For perfect cheesecakes, choose dry Adyghe cheese and mash it thoroughly with a fork. The egg should be at room temperature. Add sweetener to taste and a pinch of vanilla for aroma. Fry over medium heat until golden, being careful not to overcook to keep them moist inside.

Prep the Cheese
Place the Adyghe cheese in a bowl and mash thoroughly with a fork or blend until creamy to remove lumps.

Mix Ingredients
Add the egg, sweetener, and vanilla to the cheese. Mix well until smooth.

Shape the Pancakes
Wet your hands with water or oil to prevent sticking. Roll small balls and flatten into patties about 1.5-2 cm thick.

Heat the Skillet
Set a skillet over medium heat, add 1-2 tbsp of vegetable oil, and heat well.

Fry the Pancakes
Place pancakes in the skillet (not overcrowding) and fry for 2-3 minutes per side until golden. Flip gently with a spatula.

Serve
Transfer to paper towels to absorb excess oil. Serve hot with sour cream, yogurt, or fresh berries. Enjoy!
CHEF'S TIP
Choose the Right Cheese
Use dry, not too wet Adyghe cheese. If it's wet, drain it in a sieve for 30 minutes or squeeze through cheesecloth — otherwise the pancakes will spread.
No Flour Needed
This recipe doesn't require flour! The egg and cheese bind the mixture perfectly. For a firmer texture, you can add 1 tbsp of cornstarch, but it works fine without.
Sweetener Without Bitterness
Use erythritol or stevia-based sweeteners — they don't have a bitter aftertaste. Start with 5g and adjust to taste, since the cheese may be slightly salty.
Fry Over Medium Heat
Heat oil in a skillet over medium heat. Drop spoonfuls of the mixture, shaping them into rounds. Fry for 2-3 minutes per side until golden. Don't cover with a lid, or they'll become too soft.
SUBSTITUTIONS
Add your taste
- With Ricotta Instead of Adyghe Cheese Replace Adyghe cheese with ricotta — the texture becomes creamier, but the pancakes may be less firm.
- Vanilla Extract Instead of Vanillin Swap vanillin for 1 tsp of natural vanilla extract for a deeper aroma.
- Add Berries Fold 1 oz (30g) of fresh raspberries or blueberries into the mixture for a burst of flavor and color.
- Bake in the Oven Place the pancakes on a parchment-lined baking sheet and bake at 180°C (350°F) for 20-25 minutes until golden.

How to Store Diet Cheesecakes
Cool completely, then store in an airtight container in the fridge for up to 2 days. Reheat in a dry skillet for 1-2 minutes per side or microwave for 30 seconds. Freeze in a single layer on a baking sheet, then transfer to a bag. Thaw at room temperature and reheat until golden.
