SIMPLE PROCESS

Step by step recipe

The key is properly whipped egg whites — they should be chilled, and the bowl and beaters must be completely clean and grease-free. Gelatin should be dissolved in warm (not hot!) water to bloom. Combine gelatin with the egg white mixture gently but thoroughly. Chill for at least 30 minutes to set.

Soak the Gelatin

Sprinkle 15 g (about 0.5 oz) of gelatin over 100 ml (about ⅓ cup) of warm water (40–50°C / 100–120°F). Let it sit for 10–15 minutes to bloom.

Whip the Egg Whites

Separate 3 egg whites (from 165 g / about 3 large eggs). Ensure the bowl and beaters are clean and dry. Beat the whites on high speed until soft peaks form. Add 3 g (about ½ tsp) sweetener and 4 g (about 1 tsp) melon flavor, continue beating until stiff peaks.

Heat the bloomed gelatin in a water bath or microwave in short bursts until completely dissolved. Do not boil!

Chill the Egg Whites and Equipment

Cold egg whites whip better. Also chill the bowl and beaters in the fridge for 10–15 minutes before starting — this speeds up whipping and creates a more stable foam.

Use Warm, Not Hot, Water for Gelatin

Water should be around 40–50°C (100–120°F) to hydrate gelatin without destroying its gelling power. Hot water breaks down the protein.

Don't Overmix After Adding Gelatin

Once the gelatin is incorporated, beat just until smooth. Overmixing can make the texture too dense.

Let It Fully Set Before Cutting

After 30 minutes in the fridge, the mass should be firm. If still soft, chill another 15–20 minutes. Use a sharp knife dipped in water for neat cubes.

SUBSTITUTIONS

Add your taste

  • Replace Melon Flavor with Natural Ingredients Use 2 tablespoons of fresh melon juice or puree instead of the flavor, but increase gelatin to 20 g to compensate for extra liquid.
  • Try Other Flavorings Any fruit or berry essence works — strawberry, raspberry, lemon. Change the flavor to suit your mood.
  • Replace Sweetener with Honey or Syrup Add 1–2 tablespoons of honey or maple syrup for a more natural sweetness, but calories will increase.

How to Store Melon Marshmallow

Store in an airtight container in the fridge for up to 5 days. It may soften at room temperature, so keep it cool. Freeze on parchment in a single layer, then transfer to a bag; store for up to 2 months. Thaw in the fridge.
