SIMPLE PROCESS
Step by step recipe
The key to perfect homemade white chocolate is thorough mixing – butter must be at room temperature for easy blending with coconut flakes. Add sweetener and vanilla only after the base is smooth. Spread the mixture thinly into molds for even and quick setting. Freeze just until firm – don't over-freeze.

Prep the Ingredients
Take the butter (50 g / 3.5 tbsp) out to soften. Prepare your molds – silicone or regular lined with parchment paper.

Mix the Base
In a bowl, combine the softened butter and coconut flakes (40 g / ½ cup). Mash with a fork or spoon until smooth and paste-like.

Add Sweetener and Vanilla
Stir in the sweetener (20 g / about 1.5 tbsp) and vanilla powder (1 g / a pinch). Mix until fully incorporated.

Shape the Chocolate
Spread the mixture evenly into the molds, no more than ½ inch (1 cm) thick. Smooth the surface.

Freeze
Place the molds in the freezer for 45 minutes until completely firm. The chocolate should be solid and easily pop out.
CHEF'S TIP
Use Room-Temperature Butter
Take the butter out 30–40 minutes beforehand – it should be soft but not melted. This ensures a smooth, lump-free mixture.
Blend Until Smooth
Mix butter and coconut flakes thoroughly with a fork or spoon until you get a paste-like consistency. If the flakes are coarse, pulse them briefly in a blender.
Adjust Sweetness to Taste
Feel free to tweak the amount of sweetener – taste the mixture before freezing. If using liquid sweetener, reduce the amount to keep the texture firm.
Add Mix-Ins for Variety
Stir in chopped nuts, dried berries, or citrus zest to create new flavor combinations and add texture.
SUBSTITUTIONS
Add your taste
- Replace Butter with Coconut Oil For a vegan version and stronger coconut flavor, use coconut oil (50 g / ¼ cup). The texture may be slightly denser when set.
- Use Honey or Maple Syrup Instead of Sweetener If you're not counting carbs, replace the sweetener with 20 g (1 tbsp) of honey or maple syrup – it adds flavor but increases calories and carbs.
- Add Dry Milk for Creaminess For a more authentic white chocolate taste, incorporate 20 g (2 tbsp) of dry milk powder along with the sweetener – it creates a firmer, creamier texture.
- With Cocoa Powder – Dark Version Add 10 g (1 tbsp) of cocoa powder to turn this into a dark, sugar-free chocolate with a coconut twist.
HOW TO STORE
How to Store Homemade White Chocolate
Store in an airtight container in the refrigerator for up to 2 weeks. You can also freeze for up to 1 month – let it sit at room temperature for 5–10 minutes before serving. Do not leave out for long, as the butter may soften and the chocolate lose its shape.
