SIMPLE PROCESS
Step by step recipe
The key to this salad is the order of ingredients. Sear the chicken until golden, then add chili and garlic for aroma. Green beans should stay slightly crisp – add them at the end and don't overcook. Cream and soy sauce create a velvety dressing that ties everything together. Add bell peppers off the heat so they remain crunchy and vibrant.

Prep the ingredients
Place green beans in a saucepan, cover with water, and heat until thawed (about 5 minutes), then drain. Slice chicken breast into thin strips against the grain. Seed and slice bell peppers into strips. Finely chop the red chili and garlic.

Sear the chicken
Heat vegetable oil in a skillet over high heat. Add the chicken and stir-fry for 3–4 minutes until golden and cooked through.

Add chili and garlic
Sprinkle in the chopped chili and garlic. Stir and cook for 1 more minute until fragrant.

Add beans and sauce
Add the drained green beans and stir. Once chicken is browned, pour in the soy sauce and mix. Then add cream, reduce heat to medium, and simmer for 2–3 minutes until the sauce thickens.

Finish with bell peppers
Turn off the heat. Stir in the sliced bell peppers – they'll warm through but stay crisp. Season with salt and pepper (remember the soy sauce is salty).

Serve
Divide the warm salad between plates. Garnish with fresh herbs or a sprinkle of sesame seeds if desired.
CHEF'S TIP
Choose the right chicken
Use boneless, skinless chicken breast. Slice across the grain into thin strips for quick cooking and juiciness.
Adjust the heat
Control the spiciness by removing seeds from the chili for milder heat, or keep them for extra fire.
Green beans – frozen is fine
If using frozen green beans, don't fully thaw – just rinse under hot water and drain. They'll stay crunchy.
Light cream works best
Use 10–15% cream for a silky sauce that won't overwhelm the dish. For a thicker sauce, stir in a teaspoon of flour before adding cream.
SUBSTITUTIONS
Add your taste
- Swap chicken for turkey or shrimp Turkey gives similar results, and shrimp turns it into a seafood salad – just cook for 2–3 minutes.
- Replace green beans with broccoli or asparagus Broccoli or asparagus pair beautifully with the soy-cream sauce. Blanch them for 2–3 minutes before adding.
- Soy sauce – tamari or coconut aminos For gluten-free, use tamari; for a sweeter note, coconut aminos. Both deliver umami flavor.
- Add nuts for crunch Sprinkle with toasted cashews or peanuts at the end for extra texture and richness.
HOW TO STORE
How to Store Warm Chicken Salad
Best served fresh and warm. Leftovers keep in the fridge for up to 2 days in an airtight container. When reheating, add a splash of water or cream to restore the sauce. Do not freeze – beans and peppers will lose their texture.
