Step by step recipe
The key to great broccoli crisps is getting the broccoli finely chopped and mixing it thoroughly with the cream cheese and shredded cheese. The mixture should be thick enough to shape into thin rounds without spreading too much on the baking sheet.

Finely chop the broccoli
Break the broccoli into small florets and process it in a meat grinder or blender until finely chopped. Keep the texture relatively dry and avoid turning it into a watery puree.

Prepare the cheese
Grate the semi-hard cheese using a medium or coarse grater. Have the cream cheese ready so it can be easily combined with the other ingredients.

Mix the batter
Combine the chopped broccoli, cream cheese, grated semi-hard cheese, eggs, and spices. Mix thoroughly until the ingredients are evenly distributed and the mixture is cohesive.

Prepare the baking sheet
Line a baking sheet with parchment paper or use well-greased aluminum foil. This creates a nonstick surface and makes the finished crisps easier to remove.

Shape the crisps
Spoon the broccoli-cheese mixture onto the prepared baking sheet and shape it into thin, evenly sized rounds. Leave a little space between each one for even cooking.

Bake until golden and crisp
Bake at 240 °C for about 20 minutes. Reduce the oven temperature to 180 °C and bake for another 15 minutes, or until the crisps are golden, firm, and nicely browned.

The initial 240 °C heat quickly creates a browned surface, while lowering the oven to 180 °C allows the centers to finish cooking without over-browning the cheese.

How to Store Broccoli Cheese Crisps
Cool the baked crisps completely, then transfer them to an airtight container and refrigerate for up to 2–3 days. To bring back some of their crisp texture, reheat them in a 180 °C oven for several minutes. A microwave works for quick reheating, but the exterior will be softer. The cooked crisps can also be frozen once completely cooled. Store them in a freezer-safe container or bag, thaw in the refrigerator, then reheat in the oven until hot.
