Grate 2 medium beets (about 7 oz / 200 g) on a coarse grater. Place in a pot, add 4 cups (1 liter) of cold water. Bring to a boil, add citric acid (3 g), salt (3 g), and sweetener (3 g). Reduce heat, simmer for 10 minutes, skimming any foam. Let it cool completely.
