Recipe preparation
Sift the flour, mix in the ground seeds.
In a bowl, mix soft butter, cottage cheese, vanilla, baking powder or baking soda (neutralized with vinegar), and 1–2 tsp sweetener. Add the dry mixture and knead into dough. It should be soft but not sticky.
Wrap the dough in plastic wrap and chill in the fridge for 30–40 minutes.
Roll out the dough 0.5–1 cm thick and cut into shapes.
Pour 2 tbsp sweetener into a small plate. Dip one side of each cookie into the sweetener and place on a baking sheet, sweetener side up.
Bake at 190–200°C for 10–15 minutes until done.
