Remove the skin from the chicken, cut the meat into small pieces, separate it from the bones, and place it in a pot. Season with salt, pepper, and any spices you like. Cover and refrigerate for about 40 minutes.
Sterilize the jars thoroughly.
Place 10 peppercorns and 2 bay leaves at the bottom of each sterile jar.
Fill the jars with the chicken, but don’t pack it too tightly. Cover them with foil instead of a lid.
Place the jars in a cold oven, set to 150°C (300°F), and cook for 4.5 hours.
After turning off the oven, let the jars sit inside for another 30 minutes to cool slightly. Then remove the jars, seal with sterilized lids, and turn them upside down.
