Recipe preparation
Take 2 eggs and carefully separate the whites from the yolks.
Place each yolk in a small bowl, and beat the whites with a pinch of salt until stiff peaks form.
To ensure the whites whip properly, make sure there are no traces of yolk, and that the bowl and mixer attachments are completely dry and free of grease.
Line a baking tray with parchment paper, foil, or a silicone baking mat.
Spoon the whipped whites onto the tray, forming two "nests."
Sprinkle the nests with cheese.
Carefully place a yolk in the center of each nest.
