
Bird's milk
Recipe preparation
White layer:
4 eggs (protein),
sweetener,
lemon juice half a glass,
milk 1 glass,
gelatin 20 g
Chocolate layer:
Cocoa 2 tsp.,
milk 2 tbsp.,
sweetener,
gelatin 10g.
Soak the gelatin for the white layer (20g) in a glass of milk, and soak the gelatin (10g) in half a glass of milk for the chocolate layer.
Leave them for an hour.
After an hour, heat the mixture with gelatin (dissolving it) and cool.
Dilute cocoa in 1.5 tbsp. add sweetener to milk and boil cocoa for 5-7 minutes. Add half a glass of gelatin and leave to cool.
Pour half of the chocolate over the bottom of the mold and refrigerate.
Dissolve the sweetener in the lemon.
Beat the whites into a fluffy foam, gradually adding lemon and then cooled gelatin (the mass should become very thick and increase in volume).
Put the mass in a mold on the already frozen chocolate layer and refrigerate.
After 20 minutes, pour the remaining chocolate on top of the protein mass and remove the cake for 3 hours in the refrigerator.
