SIMPLE PROCESS
Step by step recipe
To make perfect cheese curds, it's important to properly prepare the cottage cheese - remove excess moisture so the mixture doesn't spread. The second secret is good hard cheese, which gives a golden crust and cheesy flavor. The dough should be smooth and slightly moist but not sticky. Fry over medium heat under a lid - this way the curds cook through and stay juicy.

Prepare the cottage cheese and cheese
If the cottage cheese is wet, drain it through a sieve or cheesecloth to remove excess whey – this helps the curds hold their shape. Grate the cheese on a fine grater. The finer the shreds, the smoother the texture.

Mix all the ingredients
In a large bowl, combine the cottage cheese, grated cheese, and egg. Mix thoroughly with a fork or spoon until smooth. Add salt, pepper, and your favorite spices to taste. If using herbs, add them at this stage.

Shape the curds
With wet hands, form the cheese mixture into small round or oval patties about 1.5–2 cm thick. To prevent sticking, periodically wet your hands with cold water.

Fry until golden brown
Heat a skillet with vegetable oil over medium heat. Place the curds in the skillet, leaving some space between them. Cover with a lid and fry for 4–5 minutes until the bottom is golden brown.

Flip and finish cooking
Carefully flip the curds with a spatula and fry the other side for 3–4 minutes without a lid, until golden brown. The curds should be puffy and appetizing.

Serving
Transfer the cooked curds to a plate lined with paper towels to absorb excess oil. Serve hot with sour cream, yogurt, jam, or honey.
CHEF'S TIP
Perfect dough texture
For especially tender cheese curds, use creamy cottage cheese - it doesn't require draining and yields a smoother mixture. If your cottage cheese is grainy, push it through a sieve or blend it with an immersion blender.
Secret to a crispy crust
Add 1 tablespoon of cornstarch instead of flour to the dough - this makes the crust crispier while keeping the inside airy. Flour weighs down the texture, while starch works more delicately.
Spicy touch
Add a pinch of nutmeg - it pairs wonderfully with cheese and cottage cheese, giving the dish a subtle, warming aroma. You can also try dried garlic or smoked paprika.
SUBSTITUTIONS
Add your taste
- With herbs and garlic Add chopped dill and a clove of garlic pressed through a press to the dough - you'll get a fragrant appetizer that goes great with borscht or soups.
- Sweet version for kids Omit salt and pepper, add 1 tablespoon of sugar and a pinch of vanilla. Serve with honey, berry sauce, or condensed milk - kids will love it.
- With a surprise filling Form a flat cake, put a small piece of butter or hard cheese in the center, pinch the edges, and fry - you'll get a melting, gooey filling inside.
- Baked cheese curds (lighter version) Place the curds on a baking sheet lined with parchment, brush with oil, and bake at 190°C for about 20 minutes. This is a lower-fat option, ideal for those watching their figure.
HOW TO STORE
How to store cheese curds properly
Freshly made cheese curds are best eaten immediately while hot and crispy. If you plan to keep them for the next day, let them cool completely to room temperature, then transfer to an airtight container and refrigerate. They will keep for up to 2 days. To reheat, use a dry skillet or oven: warm over medium heat for 2–3 minutes on each side to restore the crispy crust. In an air fryer, 5 minutes at 160°C is enough. Freezing is a great way to make a batch ahead: freeze them in a single layer on a board, then transfer to a zip-lock bag. Fry directly from frozen, increasing cooking time by 4–5 minutes.
