The key to this casserole is properly whipped batter. Use medium-fat cottage cheese (5–9%) at room temperature, and room-temperature eggs for better fluffiness. Beat everything with a mixer until smooth and creamy. Don't open the oven for the first 20–25 minutes to prevent sinking. Let it rest after baking for an even more tender texture.

Prep the Ingredients
Take 500 g (about 2 cups) of cottage cheese and 275 g (about 5–6 large) eggs out of the fridge 30 minutes before cooking — they should be at room temperature.

Beat Cottage Cheese with Eggs and Sweetener
In a large bowl, combine cottage cheese, eggs, and 10 g (about 2 tsp) granulated sweetener. Beat with a mixer on medium speed for 3–5 minutes until smooth, creamy, and lump-free.

Prepare the Baking Dish
Grease an 8–9 inch (20–22 cm) baking dish with butter or line with parchment paper. If using a silicone mold, no greasing is needed.

Transfer and Smooth the Batter
Pour the mixture into the dish, smooth the top with a spatula. Place the dish in a preheated oven at 160°C (325°F).

Bake Until Golden
Bake for 30–40 minutes until the top is golden brown. Do not open the oven for the first 25 minutes. Test doneness with a dry skewer.

Cool and Serve

Beat Until Fluffy
The longer you beat (3–5 minutes), the lighter the casserole will be. Aim for a smooth, creamy consistency with a slight increase in volume.
Don't Open the Oven Early
The casserole rises during the first 25 minutes. Sudden temperature changes can cause it to sink. Wait until the top is golden before checking.

Reheat a slice in the microwave (30–40 seconds) or in the oven at 160°C (325°F) for 10 minutes. You can freeze portions: wrap each piece in plastic and place in a freezer bag. Store for up to 2 months. Thaw in the fridge for 4–6 hours or at room temperature for 1–2 hours.
