For a tender crumb, let the melted butter cool slightly before combining it with the eggs. Once the flour and baking soda are added, mix only until the batter comes together. Fold in the cranberries last so the berries stay intact and distribute evenly throughout the cupcakes.

Melt the butter
Melt the butter using your preferred method, then let it cool for a few minutes. It should be liquid and warm rather than hot.

Make the batter base
Combine the melted butter with the eggs, baking soda, and granulated sweetener. Mix until the ingredients are evenly incorporated.

Add the dry ingredients

Fold in the cranberries

How to Store Cranberry Cupcakes
Cool the cupcakes completely on a wire rack, then transfer them to an airtight container or wrap them tightly. Store them at room temperature in a cool, dry place for up to 2 days. They can be refrigerated for up to 4 days, although bringing them back to room temperature before serving gives the best texture. The cupcakes can also be frozen individually in airtight packaging. Thaw them in the refrigerator or at room temperature, then gently warm them in the oven if desired.
