Beat the eggs and add salt, milk, herbs, and spices. Pour the mixture into a pan and fry on both sides. Cut the omelet into equal portions.
Grate the cheese and spread half of it on three slices of bread. Place a layer of omelet on top, sprinkle with the remaining cheese, cover with a second slice of bread, and fry the sandwiches for a few minutes on each side until golden.
