Recipe preparation

Peel off the zest from lemons and limes with a special knife or fine grater.

Try not to touch the white part, it tastes bitter.

Combine the zest with the sweetener and set aside, letting it soak in the citrus scent.

Squeeze the juice out of the pulp.

To get a lot of juice, lemons and limes need to be heated in the microwave for literally 30 seconds.

Pour the juice into the sweetener, stir and place in a water bath.

Add butter in small pieces to the mixture.

Stir with a spoon until the oil is completely dissolved.

Whisk the eggs with a whisk until smooth, but not foamy.

Pour into the mixture in a thin stream and keep in a water bath, stirring constantly, for about 15 minutes, until the cream thickens.

Remove the cream from the heat, cool slightly and pour into jars, preferably through a strainer, to remove pieces of rind and possibly protein flakes.
