
Lemon Curd

Use a zester or fine grater to remove the zest from the lemons. Avoid the white part, as it is bitter.
Mix the zest with a sugar substitute and let it sit for a while to absorb the citrus aroma.
Juice the lemons. To get more juice, warm the lemons in the microwave for about 30 seconds. Pour the juice into the zest with the sugar substitute and mix.
Beat the eggs with a fork until smooth, but not frothy. Add the egg mixture to the lemons with the sweetener and mix thoroughly.
Pour the mixture into a small saucepan and cook over low heat, stirring, until it begins to thicken. Then add butter and stir until fully melted. Continue cooking until the curd thickens to the desired consistency.
Remove from heat, let it cool slightly and your lemon curd is ready.
