Step by step recipe
The key to tender baked shrimp is speed: preheat the oven thoroughly to 250 °C (482 °F) and arrange the shrimp in a single layer so they cook evenly. Greasing the baking dish with olive oil also helps prevent sticking and adds extra flavor. Mix the sauce thoroughly before pouring it over the shrimp so the garlic, lemon zest, and red pepper are distributed evenly. Add the fresh parsley only after baking to preserve its bright color and fresh herb flavor.

Preheat the oven
Preheat the oven to 250 °C (482 °F). The high temperature allows the shrimp to cook quickly while keeping their texture tender.

Prepare the baking dish
Lightly grease an oven-safe baking dish with olive oil. Arrange the tiger shrimp in a single, even layer without overlapping.

Make the lemon-garlic sauce
In a small bowl, combine the lemon juice, olive oil, minced garlic, lemon zest, and ground red pepper. Stir thoroughly until the ingredients are evenly combined.

Coat the shrimp
Pour the lemon-garlic mixture evenly over the shrimp. Gently toss them in the baking dish if needed so each shrimp is coated with the flavorful sauce.

Bake until tender
Place the dish in the preheated 250 °C (482 °F) oven and bake for about 8–10 minutes. The shrimp should become opaque and tender without drying out.

Add parsley and serve

Don't overcook the shrimp
Shrimp cook very quickly, so start checking them at around 8 minutes. Remove them as soon as they become opaque and tender to avoid a firm, rubbery texture.
Keep them in one layer
Arrange the shrimp without overlapping. A single layer allows the hot oven air and baking dish to heat the shrimp more evenly.
Use fresh lemon
Freshly squeezed lemon juice and freshly grated zest provide a much brighter citrus aroma. When zesting, use only the yellow outer layer and avoid the bitter white pith.
Add parsley at the end
Do not bake the fresh parsley with the shrimp. Sprinkle it over the finished dish immediately after it comes out of the oven for the freshest flavor and brightest color.
SUBSTITUTIONS
Add your taste
- Use large shrimp Tiger shrimp can be replaced with other large shrimp. Adjust the cooking time slightly if the shrimp are noticeably smaller, as smaller shrimp cook faster.
- Use lime instead of lemon Lime juice and zest can replace lemon for a brighter, slightly more tropical citrus flavor. The cooking method remains the same.
- Make it mild Reduce or omit the ground red pepper if you prefer a milder dish. The lemon and garlic will still provide plenty of flavor.
- Swap the herbs Fresh parsley can be replaced with cilantro or dill. Add the herbs just before serving to keep their fresh flavor and color.

How to Store Baked Shrimp
Let the cooked shrimp cool briefly and transfer them to an airtight container. Refrigerate within 2 hours of cooking and store at 4 °C (40 °F) or below for up to 2 days. Reheat gently in a skillet over low heat or in short microwave intervals to avoid making the shrimp rubbery. Cooked shrimp can be frozen, although the texture may become slightly less tender after thawing. For the best results, thaw them in the refrigerator and reheat only once.
