The secret is in the cut: don't slice all the way through, creating a pocket. The tomato-basil filling not only adds flavor but also keeps the meat incredibly moist. Pat the breasts completely dry before frying for a golden, crispy crust. Cook over medium heat for even cooking.

Prepare the Chicken
Rinse 500 g (1.1 lb) of chicken breast under cold water and pat thoroughly dry with paper towels. Remove excess moisture – crucial for a crispy crust.

Create a Pocket
Using a sharp knife, slice each breast from the side, not all the way through, to form a deep pocket. Season inside with salt and pepper (about 3 g salt).

Prepare the Filling
Slice 200 g (7 oz) of tomatoes into thin rings. Wash and pat dry 30 g (1 oz) of fresh basil leaves.

Stuff the Breasts
Into each pocket, place several basil leaves and 2–3 tomato slices. Fold the edges together and secure with toothpicks to keep the filling from falling out during frying.

Pan-Fry
Heat a skillet with 30 g (1 oz) of vegetable oil over medium heat. Place the stuffed breasts in and fry for 5–6 minutes per side, until golden brown and cooked through (the meat should be matte inside).

Serve
Remove toothpicks, let the chicken rest for 5 minutes, then serve with a vegetable side or rice. Enjoy!

Choose Similar-Sized Breasts
For even cooking, pick fillets of similar weight and thickness. If they are very large, slice them horizontally in half.
Don't Overcook
Chicken breast dries out easily. Fry 5 minutes per side – that's enough for full doneness. Check: the meat should be matte inside, no pinkness.
Use Fresh Basil
Fresh basil gives a vibrant aroma. If unavailable, use dried basil but reduce to 1 teaspoon per serving.
Let the Meat Rest
After frying, let the breasts rest under foil for 5 minutes – juices redistribute, making them even more tender.

Add your taste
- Replace Tomatoes with Cheese Stuff the pocket with mozzarella or feta instead – you'll get cheesy chicken. Cooking time stays the same.
- Add Garlic for a Kick Mince a clove of garlic and add it to the basil and tomatoes – the flavor becomes richer.

How to Store Chicken Breasts with Tomatoes and Basil
Cool the cooked chicken to room temperature, then place in an airtight container. Store in the fridge for up to 3 days. Reheat in a skillet (2–3 minutes per side) or microwave (1–2 minutes). Not recommended for freezing, as tomatoes and basil lose texture and become watery.
