Step by step recipe
The key is slicing the chicken properly. Cut the breast along the grain into finger-thick strips to keep them juicy. Wrap each strip tightly with bacon, overlapping slightly to prevent unrolling. The mayonnaise-mustard sauce adds a zesty kick and helps create a golden glaze. There's no need to grease the baking dish — the bacon releases enough fat. Bake until deeply browned, but be careful not to dry out the chicken.

Preheat the Oven and Prepare the Dish
Preheat the oven to 200°C (400°F). Line a baking dish with parchment paper — no need to grease, as the bacon will release enough fat.

Cut the Chicken
Slice 800 g (about 1.8 lb) of chicken breast into finger-thick strips (about ¾ inch) along the grain. Season with salt and pepper to taste.

Wrap with Bacon
Tightly wrap each chicken strip with a slice of bacon (400 g / 14 oz), overlapping slightly. Place the roll-ups seam-side down in the baking dish.

Make the Sauce
In a small bowl, mix 60 g (about ¼ cup) of mayonnaise, 15 g (1 tbsp) of mustard, and, if desired, a teaspoon of lemon juice. Stir until smooth.

Brush the Roll-Ups
Using a pastry brush or spoon, coat each roll-up evenly with the sauce on all sides.

Bake Until Golden
Place the dish in the oven and bake for 30–35 minutes until the bacon is crisp and the chicken is fully cooked (juices run clear). Let rest for 5 minutes before serving.

How to Store Chicken in Bacon
Cool the roll-ups to room temperature, then store in an airtight container in the fridge for up to 3 days. Reheat in the oven at 170°C (340°F) for 10–12 minutes or in the microwave for 2–3 minutes. You can freeze them: wrap each roll in plastic wrap and place in a freezer bag for up to 2 months. Thaw in the fridge and reheat until crispy.
