For juicy chicken, cut the fillet into evenly sized pieces so everything cooks at the same rate. Slice the mushrooms fairly generously because they will shrink as they cook while retaining a pleasant texture. Start by browning the chicken, then add the mushrooms and cook them together, stirring occasionally. Add the soy sauce after the main frying stage and avoid adding extra salt until you have tasted the finished dish. A few minutes of gentle simmering after adding the sauce allows the chicken and mushrooms to absorb its savory flavor.

Prepare the chicken and mushrooms
Cut the chicken fillet into small, evenly sized pieces. Clean the mushrooms if needed and slice them or cut them into quarters, depending on their size.

Brown the chicken
Heat a skillet well and add the chicken. Cook for about 5 minutes, turning the pieces occasionally so they brown evenly and begin cooking through.

Add the mushrooms

Do not overcrowd the skillet

Skip the extra salt

How to Store Chicken and Mushrooms in Soy Sauce
