SIMPLE PROCESS
Step by step recipe
To keep the cauliflower slightly crunchy and not overcooked, sauté it for 5 minutes until al dente. Whisk eggs with salt and grated cheese until smooth, then pour over the cauliflower and cook covered for 7-8 minutes over medium heat. The cheese forms a crust and binds the dish. Serve with fresh herbs.

Prep the Cauliflower
Break the cauliflower into florets, rinse, and pat dry. Remove tough stems if desired.

Sauté the Cauliflower
Melt 50 g of butter in a skillet over medium heat. Add the florets and sauté for 5 minutes, seasoning with salt and pepper. Stir occasionally to brown evenly.

Make the Egg Mixture
In a bowl, whisk the eggs with salt and spices, then stir in 150 g of grated cheese until combined.

Pour Over the Cauliflower
Evenly pour the egg-cheese mixture over the cauliflower in the skillet.

Cook Covered
Cover and cook over medium heat for 7-8 minutes until the eggs are set and the cheese melts.

Serve
Sprinkle with chopped fresh herbs (dill, parsley). Serve hot as a side dish or main. Enjoy!
CHEF'S TIP
Cut into Small Florets
Cut cauliflower into 1.5-inch florets for even cooking. Larger pieces take longer and may remain raw inside.
Butter is Key
Use quality unsalted butter (82% fat). It adds a rich, creamy flavor and helps achieve a golden color.
Don't Overcook the Cauliflower
5 minutes of sautéing over medium heat is enough to soften it slightly. It will finish cooking under the lid with the eggs.
Choose a Good Melting Cheese
Semi-hard cheese (Gouda, Edam, or a similar) melts well and creates a golden, flavorful crust.
SUBSTITUTIONS
Add your taste
- With Broccoli Replace cauliflower with broccoli — the recipe stays the same, but the flavor becomes slightly sweeter.
- Add Garlic Stir in 1-2 cloves of minced garlic while sautéing for a fragrant kick.
- Vegan Version Replace eggs with crumbled tofu (200 g) and use vegan cheese or skip cheese — still tasty.
- With Tomatoes Add 100 g of diced tomatoes with the egg mixture for a juicier version.
