Step by step recipe
The secret to this dish lies in the right temperature and sequence. Cook the turkey on a preheated grill pan to get beautiful sear marks and keep the juices inside. Flip the meat only once – this locks in moisture. Apply mayonnaise immediately after flipping so it begins to caramelize. Add tomatoes and cheese at the very end, cover with a lid – they will soften and melt without overcooking. Follow our steps for perfect French-style turkey.

Prepare the turkey
Cut 300 g (about 10 oz) turkey fillet across the grain into steaks about 1.5–2 cm (¾ inch) thick. Lightly pound if needed to even out thickness. Season with salt and pepper.

Heat the grill pan
Place a grill pan over high heat and preheat for 3–4 minutes until smoking. No oil is needed – the ribbed surface prevents sticking.

Sear the turkey on one side
Arrange the steaks in a single layer on the pan. Cook for 5–7 minutes without moving until grill marks appear and the meat is browned.

Flip and spread with mayonnaise
Turn the steaks over with a spatula. Immediately spread a thin layer of mayonnaise (60 g / ¼ cup) over the tops using a spoon or brush.

Add tomatoes and cheese
Slice 30 g (1 oz) tomatoes into thin rounds and place on top of the mayonnaise. Sprinkle with 30 g (⅓ cup) grated hard cheese, covering the surface.

Cover and finish cooking
Reduce heat to medium, cover the pan with a lid, and cook for 5–7 minutes until the cheese melts and the turkey is fully cooked. Serve hot, garnished with fresh herbs.

Choose turkey fillets of even thickness
Cut the meat into steaks about ¾ inch (1.5–2 cm) thick for even cooking. If pieces are uneven, lightly pound them or press with a rolling pin.

Don't overcook the turkey
