Step by step recipe
The key to great skillet vegetables is avoiding overcooking. The green beans and bell peppers should become tender while retaining a pleasant bite. When zesting the lemon, remove only the thin yellow outer layer and avoid the white pith, which can taste bitter. Add the parsley near the end so it keeps its fresh flavor and bright color. Let the vegetables rest briefly after cooking so the lemon and paprika flavors can come together.

Prepare the bell pepper
Wash the bell pepper thoroughly, remove the stem and seeds, and cut it into thin, evenly sized strips so the pieces cook at the same rate.

Prepare the lemon and parsley
Wash the lemon well and finely grate the yellow zest, avoiding the white pith. Squeeze the juice from half of the lemon. Wash, dry, and finely chop the parsley.

Heat the skillet
Place a large skillet over medium-high heat and add 30 g of vegetable oil. Let the oil heat well, but do not allow it to smoke.

Cook the vegetables with lemon
Add the green beans and sliced bell pepper. Sprinkle in about 5 g of paprika, then add the lemon zest and the juice of half a lemon. Cook for about 5–7 minutes, stirring regularly, until the vegetables are tender but still slightly crisp.

Add parsley and salt
Add the finely chopped parsley and 2 g of salt, or adjust the amount to taste. Stir well and cook for another 1–2 minutes so the parsley can release its fresh aroma.

Rest and serve
Remove the skillet from the heat and let the vegetables cool slightly. Transfer them to serving plates and enjoy as a light vegetable dish or as a flavorful side for meat, poultry, or fish.

Let the cooked vegetables cool completely and transfer them to an airtight container. Refrigerate for up to 3 days. Reheat gently in a skillet over medium heat for a few minutes or in the microwave using short intervals. Freezing is not recommended because the vegetables may lose their crisp texture after thawing.
