SIMPLE PROCESS
Step by step recipe
The key is the milk temperature: bring it to a boil and remove from heat immediately, so the meat doesn't overcook. The chicken is submerged in hot milk and left to steep in warmth for an hour, allowing the fibers to soften and absorb moisture. Seasoning and spices are added beforehand for balanced flavor. After steeping, pat the breast dry, cool, and slice.

Prep the Chicken
Rinse and pat dry the chicken breasts. Rub with salt and your favorite spices on both sides. Let sit at room temperature for 10 minutes.

Heat the Milk
Pour 1 liter of milk into a pot and bring to a boil over medium heat. Do not let it boil longer than 30 seconds. Remove from heat immediately.

Submerge the Chicken
Carefully place the chicken breasts into the hot milk, ensuring they are fully covered. Add a little more milk if necessary.

Steep in Warmth
Cover the pot with a lid, wrap it in a thick towel or blanket, and leave undisturbed for 1 hour. The residual heat will gently cook the meat.

Remove and Cool
After 1 hour, uncover the pot, take out the chicken, and place on a rack or colander to drain. Let cool to room temperature.

Slice and Serve
Slice the cooled chicken against the grain into ½-inch medallions. Serve warm or cold with vegetables, or use in salads and sandwiches.
CHEF'S TIP
Don't Overheat the Milk
Bring the milk to a boil and turn off the heat immediately. If left boiling longer, the protein may curdle and the chicken will become tough. The goal is to create a gentle heat bath.
Wrap the Pot Tightly
After adding the chicken, cover the pot and wrap it in a thick towel or blanket. This traps the heat and ensures slow, gentle cooking, making the meat tender.
Don't Reuse the Milk
The milk used for steeping absorbs juices and spices, but it's not recommended for other dishes — it may have a distinct flavor. The chicken itself, however, turns out perfect.
Serve Hot or Cold
This chicken is delicious both warm and chilled. Slice it thinly and use in sandwiches, salads, or as a main protein with your favorite sides.
SUBSTITUTIONS
Add your taste
- With Kefir or Buttermilk Replace milk with kefir or buttermilk — they add a slight tang and make the meat even more tender. Increase steeping time to 1.5 hours.
- With Cream for Richer Flavor Use 10% cream instead of milk — the chicken becomes creamier and richer in taste, though calories will be higher.
- Add Garlic and Herbs Add a few garlic cloves and a sprig of rosemary or thyme to the milk along with the spices for an aromatic twist.
- For a Kick — Mustard Before adding the milk, spread a thin layer of Dijon mustard on the chicken breasts for a tangy flavor boost.
HOW TO STORE
How to Store Milk-Steamed Chicken Breast
Cool the cooked chicken completely at room temperature, then store in an airtight container in the fridge for up to 3 days. The meat remains moist even when chilled. Freezing is not recommended — the texture may become less tender. Let it sit at room temperature for 10–15 minutes before serving.
