Recipe preparation

Peel the onion, cut in half and fry in vegetable oil, cut side down, until golden brown.

Bring 2 liters of water to a boil.

Add the meat, add fried onions, black pepper, salt and cook for 40 minutes over medium heat, skimming off the foam.

Coarsely chop the celery, add to the meat and cook.

Remove the meat from the broth, cut into large pieces.

Pour the broth into plates, add the meat and chopped herbs.
