Step by step recipe
For the best texture, remove every bone from the herring and let the butter soften at room temperature before mixing. Chop the onion by hand rather than grinding it, because grinding releases excess liquid and can make the forshmak watery. After combining everything, chill the mixture for at least 30 minutes so the butter firms up and the flavors blend together.

Prepare the herring
Take 500 g of lightly salted herring and carefully remove all bones. If using whole fillets, run your fingers over the flesh to check for small pin bones. Pat the fish dry with paper towels if necessary.

Boil the eggs
Boil 165 g of chicken eggs until fully cooked. Cool them in cold water, peel them, and set them aside for chopping.

Grind the herring
Pass the prepared herring through a meat grinder. Do not worry about making it completely smooth; a little texture gives the finished forshmak a more pleasant bite.

Chop the egg and onion
Finely chop the peeled eggs with a knife. Then finely dice 50 g of onion. Do not grind the onion, as this would release too much liquid and make the mixture watery.

Whip the herring with butter
Allow 200 g of butter to soften at room temperature. Whip it together with the ground herring until smooth and creamy. Gently fold in the chopped eggs and onion until evenly combined.

Chill and serve
Transfer the finished forshmak to an airtight container or serving dish and refrigerate for at least 30 minutes. Chilling allows the mixture to firm up and gives the flavors time to blend. Serve chilled.

Choose good-quality herring
Use good-quality lightly salted herring fillets without any off odor. If the fish tastes overly salty, soak it briefly before preparing the forshmak and pat it thoroughly dry afterward.
Chop the onion by hand
Finely dice the onion with a knife instead of running it through a grinder. This prevents excess onion juice from making the finished forshmak watery.
Soften the butter
Take the butter out of the refrigerator ahead of time and let it soften at room temperature. Soft butter blends much more easily with the herring and creates a smooth, creamy texture.
Chill before serving
Do not skip the final chilling step. After 30 minutes in the refrigerator, the butter firms slightly and the flavors of herring, egg, and onion become more balanced.
SUBSTITUTIONS
Add your taste
- Use milder herring If you prefer a gentler flavor, choose a less salty herring fillet. The remaining ingredient quantities can stay the same.
- Try red or sweet onion Regular onion can be replaced with mild sweet onion or red onion. This gives the appetizer a softer flavor with a subtle sweetness.
- Make it extra smooth For a creamier texture, chop the egg very finely. Keep the onion hand-chopped, however, so the mixture retains the right texture without becoming watery.
- Serve it as a spread Use the finished forshmak as a spread on rye or wheat bread. This does not change the recipe itself but makes it especially convenient for serving as an appetizer.
HOW TO STORE
How to Store Herring Forshmak
Transfer the finished forshmak to a clean airtight container and refrigerate it promptly. Because it contains fish, eggs, and butter, it is best consumed within 2 days. Before serving, let it stand at room temperature for about 10–15 minutes so it softens slightly and becomes easier to spread. Refreezing or keeping the prepared appetizer for an extended period is not recommended.
