SIMPLE PROCESS
Step by step recipe
The key to great baked broccoli is a short pre-boil. Cook the florets for just 3–4 minutes so they soften slightly without becoming mushy. Drain them thoroughly before baking to prevent excess water from thinning the egg mixture. Whisk the eggs, milk and melted butter until smooth, then pour the mixture evenly over the seasoned broccoli. Bake until the custard is set and the top is lightly golden, taking care not to overcook it.

Parboil the broccoli
Cut the broccoli into small florets and place them in boiling salted water. Cook for 3–4 minutes, then drain thoroughly. The florets should be slightly tender while still holding their shape.

Prepare the baking dish
Preheat the oven to a moderate temperature. Arrange the prepared broccoli evenly in a baking dish, keeping the florets in a fairly uniform layer.

Season the broccoli
Sprinkle the broccoli with salt and spices. Distribute the seasoning evenly so every portion has a balanced flavor.

Make the egg mixture
In a separate bowl, whisk the eggs with the milk and butter until smooth and evenly combined. The mixture should have a consistent texture without large streaks of separated ingredients.

Pour over the broccoli
Carefully pour the egg-and-milk mixture over the broccoli, spreading it as evenly as possible. Transfer the dish to the preheated oven.

Bake until golden
Bake for about 20 minutes, until the egg mixture is set and the surface is lightly golden. Let the dish rest for a few minutes before serving so the custard can settle.
CHEF'S TIP
Keep the broccoli crisp
Boil the florets for only 3–4 minutes. They should be slightly tender but still hold their shape, since they will continue cooking in the oven.
Drain thoroughly
Let the broccoli drain well after boiling. Excess water can make the egg mixture watery and prevent the finished dish from setting properly.
Pour evenly
Spread the egg-and-milk mixture evenly over the broccoli so the florets are surrounded by the creamy custard and cook at the same rate.
Don't overbake
Take the dish out as soon as the egg mixture is fully set and the surface is lightly golden. Overbaking can make the custard firm and dry.
SUBSTITUTIONS
Add your taste
- Swap the butter Use a small amount of vegetable oil instead if you prefer a lighter flavor or do not use butter.
- Fresh or frozen broccoli Frozen broccoli works well too. Thaw it slightly before cooking and avoid overboiling so the florets do not become watery.
- Make it more savory Use your favorite seasoning blend from the spices already included in the recipe. Adjust the salt depending on how salty the seasoning is.
- Extra-smooth custard For an especially tender texture, whisk the eggs and milk thoroughly before combining them with the broccoli.
HOW TO STORE
How to Store Baked Broccoli
Let the baked broccoli cool slightly, then transfer it to an airtight container and refrigerate. Store for up to 2 days at around 4°C. Reheat individual portions in the oven or microwave until heated through. Freezing is not recommended because the egg custard can become watery and the broccoli may lose its pleasant texture after thawing.
