Step by step recipe
The secret is a flavorful broth: cook the turkey until tender so the meat easily separates from the bone. Sauté the onions and carrots until golden to release their aroma. Add the cabbage at the end to keep it slightly crisp. Cherry tomatoes add a touch of tangy freshness. Follow these steps for a perfect soup.

Make the Broth
Cover the turkey thigh fillet with cold water (about 2 liters), bring to a boil, skim off foam, reduce heat to medium, and simmer for 50–60 minutes until the meat is tender.

Sauté Vegetables
Peel and finely chop the onion, grate the carrot coarsely. Heat oil in a skillet, sauté the onion until translucent (3–4 minutes), add the carrot and cook for another 3–4 minutes until golden.

Prep Cabbage and Tomatoes
Shred the cabbage thinly. Wash the cherry tomatoes and halve them (or leave whole).

Add to the Broth
Add the sautéed onion and carrot, shredded cabbage, and cherry tomatoes to the broth. Season with salt to taste.

Cook Until Done
Simmer the soup over medium heat for 15–20 minutes until the cabbage is tender but still slightly firm.

Serve
Let the soup rest covered for 5–10 minutes. Ladle into bowls, garnish with fresh herbs (dill, parsley) and sour cream if desired. Serve hot. Enjoy!
