Make the Chicken Broth
Place chicken, carrot slices, and a whole peeled onion in a pot with 3 liters (12 cups) of water. Bring to a boil, skim off foam, and simmer over low heat for 1.5 hours. Strain the broth and discard the onion.

Prep the Mushrooms
Slice the wild mushrooms. Sauté them in a skillet with a little oil until golden (8-10 minutes).

Add Mushrooms to the Soup
Add the sautéed mushrooms to the prepared broth and cook for 20 minutes.

Add the Cream Cheese
Grate the cream cheese finely. Add to the soup, stirring constantly, until fully dissolved. Season with salt and pepper to taste.

Finish Cooking
