Cut onions and sweet peppers, peeled from jumpers and seeds, into medium-sized cubes.
Heat both types of oil in a small saucepan. Over medium heat, cook onions and peppers with a pinch of salt, stirring often, for three minutes.
Cut the ham into small cubes. Add the ham to the saucepan and cook, stirring often, for another three minutes, until the pepper and onion are soft. Remove from heat and cool slightly.
Beat eggs lightly in a bowl with milk, salt and pepper.
