Step by step recipe
The key to this dish is properly prepared pancakes. Dry-fry them for a minute per side to make them pliable and easy to shape into baskets. Cook the bacon until crispy – it releases its own fat. Carefully crack the eggs into the pancake baskets and cook over low heat until the whites are set but the yolks remain runny. Fresh herbs complete the dish.

Prepare the pancakes
Heat the pancakes in a dry skillet for 30–60 seconds per side until pliable.

Fry the bacon
Slice 100 g of bacon into strips and fry in a dry skillet until crispy (about 3 minutes). Drain on paper towels.

Shape the pancakes into baskets
Place each pancake into a small skillet or ramekin, pressing the edges up to form a basket. Pinch to hold the shape.

Crack the eggs and add bacon
Crack 1–2 eggs (total 330 g, about 6 large) into each basket. Season with salt. Top with the crispy bacon pieces.

Cook over low heat
Cover and cook over the lowest heat for 5–7 minutes until the whites are set and the yolks are still runny. Garnish with chopped parsley (10 g) and drizzle with mayonnaise (120 g) if desired.

No oil needed for bacon
Bacon renders enough fat. Fry until crisp, then drain on paper towels.
