Step by step recipe
The secret to this dish is preparing the champignons correctly. Carefully remove the stems without damaging the caps – don't discard them, as they go into the filling with the meat. Sauté the stems with onion in butter to release their flavour. For the sauce, mix heavy cream, sour cream, and mayonnaise – it adds creaminess and richness. Bake first without cheese to ensure the meat cooks through, then add cheese for a golden crust.

Prep the champignons
Carefully remove the stems from 400 g (14 oz) of champignons without damaging the caps. Finely chop the stems and set the caps aside.

Sauté the stems with onion
In a skillet, melt 40 g (about 3 tbsp) of butter, add 50 g (about 1.8 oz) of finely chopped onion, and cook until translucent. Add the chopped mushroom stems and sauté over medium heat for 5–7 minutes until soft.

Prepare the filling
In a bowl, combine the sautéed stems and onion with 100 g (3.5 oz) of ground beef, 15 g (about ½ oz) of finely chopped dill, salt, and pepper. Mix thoroughly.

Stuff the mushroom caps
Fill each cap with the meat mixture, pressing gently. Arrange the stuffed caps in a baking dish.

Make the creamy sauce
In a small bowl, whisk together 70 g (⅓ cup) of heavy cream, 30 g (2 tbsp) of sour cream, and 40 g (2.5 tbsp) of mayonnaise until smooth. Pour the sauce over the mushrooms, ensuring even coverage.

Bake in the oven
Preheat the oven to 190°C (375°F). Bake the dish for 20–25 minutes, then remove, sprinkle with 40 g (1.4 oz) of grated semi-hard cheese, and return to the oven for an additional 5–7 minutes until the cheese melts and turns golden. Serve hot.

Choose large champignons
For stuffing, pick large mushrooms with sturdy caps – they hold more filling and stay intact during baking.
Don't overcook the stems
Sauté the stems until just tender, not crispy – they should blend well with the meat filling.
Whisk the sauce until smooth
Combine cream, sour cream, and mayo thoroughly to create a smooth, lump-free sauce that coats the mushrooms evenly.
Add cheese at the end
Sprinkle cheese over the caps 5–10 minutes before the end of baking so it melts without burning.

How to Store Stuffed Champignons
Cool the cooked mushrooms at room temperature, then transfer to an airtight container and refrigerate for up to 2 days. Reheat in the oven at 160°C (320°F) for 5–7 minutes or in the microwave. Freezing is not recommended – mushrooms become watery and lose texture upon thawing.
