Recipe preparation

Broccoli inflorescences for a short time, 5 minutes, blanch in salted boiling water.

Transfer immediately with a slotted spoon to a bowl of ice water - this will stop the cooking process and preserve the beautiful green color of the broccoli.

Chop finely and transfer to a bowl.

Add cottage cheese, egg, grated cheese, salt, spices and mix thoroughly.

Pour oil (about 3 tablespoons) into a frying pan and heat.

Put the mixture in a heap into the hot oil with a tablespoon, press lightly on top, giving the shape of a pancake.

Fry over moderate heat until golden brown on the bottom.

Turn over and fry on the other side.

Place the hot pancakes on paper towels to remove excess fat.
