Recipe preparation

Wash the eggplant and peel it.

Then cut into cubes.

Pour water into a medium bowl and add a couple tablespoons of salt.

We throw sliced eggplants into this salty water for a couple of minutes - this is in order to remove the bitterness.

Now we cut the onion into half rings.

Heat olive oil in a frying pan and add onion.

Fry for 3-4 minutes.

Add the eggplants, stir and simmer for 10 minutes, stirring constantly.

During this time, we clean the chicken liver from fat.

Then add to the eggplant and onion.

Stir and salt if necessary.

Simmer for 7-10 minutes, stirring occasionally.

Then add chopped peppers and herbs and mix.

Cover with a lid, reduce heat and simmer for another 5 minutes, or until tender.
