Peel the eggplants, cut them lengthwise into slices up to 5 mm thick and fry in vegetable oil on both sides
Filling: grated three cheese, preferably fine, add crushed garlic, mayonnaise and chopped herbs
While the eggplants are hot, lay out the filling and wrap small rolls
