SIMPLE PROCESS

Step by step recipe

For tender, flavorful eggplant without excess bitterness, slice the eggplant into even rounds and soak them in salted water first. After soaking, rinse and thoroughly pat the slices dry so excess moisture does not collect on the baking sheet. Mix the garlic thoroughly into the mayonnaise and spread it in a thin layer over the eggplant. Add the tomatoes and finish with grated cheese so the vegetables stay juicy while the cheese melts and browns. Bake until the eggplant is tender and the cheese is beautifully golden.

Slice the eggplant
Step 1

Slice the eggplant

Rinse the eggplant and cut it into evenly sized rounds. Avoid making the slices too thin so they remain tender and juicy after baking.

Soak the eggplant
Step 2

Soak the eggplant

Place the eggplant rounds in salted water and let them soak for 20–30 minutes. Rinse away excess salt, then pat the slices thoroughly dry with paper towels.

Make the garlic sauce
Step 3

Make the garlic sauce

Peel and finely mince the garlic. Mix it thoroughly with the mayonnaise until evenly combined. The sauce should be smooth and easy to spread.

Assemble the dish
Step 4

Assemble the dish

Arrange the eggplant rounds in a single layer on a baking sheet. Spread the garlic mayonnaise over them, add the tomatoes, and finish with grated semi-hard cheese.

Bake the eggplant
Step 5

Bake the eggplant

Place the baking sheet in an oven preheated to 200 °C and bake for about 25–30 minutes. The exact timing depends on the thickness of the slices and your oven.

Serve warm
Step 6

Serve warm

Once the eggplant is tender and the cheese is fully melted and golden, remove the baking sheet from the oven. Let the appetizer rest for a few minutes, then serve warm.

CHEF'S TIP

Keep the slices even

Cut the eggplant into rounds of similar thickness so they cook at the same rate. Very thin slices can dry out, while thick slices may need extra baking time.

Don't skip the soak

Soaking the eggplant in salted water helps reduce potential bitterness and softens the flavor. Pat the slices dry thoroughly afterward.

Spread the sauce thinly

A thin layer of garlic mayonnaise is enough. This keeps the garlic noticeable without overpowering the eggplant and tomatoes.

Watch the cheese

Bake until the cheese is fully melted and golden. If the top browns too quickly, lower the oven temperature slightly so the eggplant has time to become tender.

SUBSTITUTIONS

Add your taste

  • Make it lighter Replace the mayonnaise with plain yogurt or sour cream. The sauce will be lighter while keeping a creamy texture.
  • Try a different cheese Semi-hard cheese can be replaced with mozzarella, sulguni or another cheese that melts well and develops a golden crust.
  • Skip the garlic For a milder flavor, leave out the garlic. The creamy mayonnaise layer will still pair well with the eggplant and tomatoes.
  • Add more vegetables For a more vegetable-forward version, increase the amount of tomatoes while keeping the same cooking method. The extra vegetables will make the dish even juicier.

HOW TO STORE

How to Store Baked Eggplant

Let the cooked eggplant cool to room temperature, but do not leave it out for an extended period. Transfer it to an airtight container and refrigerate at 4 °C or below for up to 2 days. Reheat in the oven or microwave until thoroughly hot before serving. An oven is preferable if you want to keep some of the cheesy crust. Freezing is not recommended because the eggplant may become overly soft and watery after thawing.
