Step by step recipe
The key to perfect chicken in a bag is not to dry it out. Vegetables release moisture, creating steam that keeps the meat exceptionally juicy. Just don't open the bag during baking and let the chicken rest after turning off the oven. Feel free to vary the spices – classic choices include paprika, black pepper, garlic powder, and rosemary.

Prep the Ingredients
Rinse 700 g (about 1.5 lb) chicken drumsticks and pat dry. Slice 150 g (5.3 oz) tomatoes into large wedges, 30 g (1 oz) onion into thick rings, and mince 10 g (0.4 oz) garlic.

Season the Chicken
In a large bowl, season drumsticks with 3 g (about ½ tsp) salt and your favorite spices (e.g., paprika, black pepper, garlic powder – about 3 g). Mix well with your hands to coat evenly.

Place Everything in the Roasting Bag
Open the roasting bag and place the chicken, tomatoes, onion, and garlic inside. Tie the bag at both ends, leaving some space for steam circulation.

Poke Steam Vents
Pierce the top of the bag in 2–3 places with a toothpick to let steam escape and prevent bursting. Place the bag on a baking sheet.

Bake in the Oven
Preheat oven to 180°C (350°F). Bake the drumsticks for 30–40 minutes (depending on size) until fully cooked. Check: juices should run clear.

Rest and Serve
Remove from oven, let the chicken rest in the bag for 10 minutes. Carefully cut open the bag, transfer drumsticks to a platter, drizzle with the pan juices, and serve with your favorite side.
CHEF'S TIP
Choose Similar-Sized Drumsticks
For even cooking, pick drumsticks of similar weight. If they are large, extend baking time to 40–45 minutes.
Don't Skip the Resting Time
After baking, leave the chicken in the bag with the oven door closed for 10–15 minutes – the meat will become more tender and easier to remove from the bone.
Poke the Bag for Steam
Make 2–3 small slits on top of the bag to release steam and prevent bursting. This keeps the bag intact.
Experiment with Spices
Add turmeric for a golden color, suneli hops for a fragrant touch, or chili for heat. Customize to your taste.

Add your taste
- Replace Drumsticks with Thighs or Wings Thighs are fattier and juicier – same baking time. Wings cook faster (25–30 minutes), so check earlier.
- Add More Vegetables Potatoes, carrots, or bell peppers pair well with chicken. Cut them into chunks and add to the bag – a complete meal with a side.
- Onion-Free Version If you don't like onions, omit them or replace with celery stalks for a fresh taste.
- Make It Lower in Calories Remove the skin from drumsticks before baking – calories drop to ~180, but the meat may be slightly drier. Add extra tomatoes for moisture.
HOW TO STORE
How to Store Chicken in a Roasting Bag
Let the chicken cool completely in the bag at room temperature, then transfer to an airtight container. Store in the fridge for up to 3 days. Reheat in the oven (180°C for 10–12 minutes) or microwave (2–3 minutes). Freezing is possible, but the meat may dry out – reheat with a splash of water or broth.
