Step by step recipe
The key is the right temperature and order of adding ingredients. Fry the fillet on a well-heated skillet to get a golden crust and lock in juices. Add onions after the chicken browns – they bring sweetness and softness. Add garlic at the very end to release its aroma without burning. Follow our steps for a perfect dish.

Cut the chicken fillet
Wash 200 g (about 7 oz) chicken fillet, pat dry, and cut into small pieces (about 3–4 cm / 1.5 inches) for even cooking.

Prepare onions and garlic
Peel 20 g (about 1 small) onion and 10 g (2 cloves) garlic. Slice the onion into thin half-rings, and mince the garlic finely.

Fry the chicken until golden
Heat a skillet with 20 g (1.5 tbsp) vegetable oil over medium heat. Arrange chicken pieces in a single layer and fry for 3–4 minutes until browned, then flip and fry another 3–4 minutes.

Add onions and garlic
Once the chicken is golden, add the sliced onion and minced garlic. Season with salt (5 g / 1 tsp) and pepper to taste. Cook for 3–4 minutes, stirring, until the onion softens and the garlic becomes fragrant.

Finish cooking and serve
Cook for another 2–3 minutes until the chicken is fully done. Remove from heat, transfer to a plate, sprinkle with fresh herbs, and serve hot.

Optional side
Serve with potatoes, rice, or a vegetable salad – this dish pairs well with any side.
CHEF'S TIP
Don't move the chicken right away
Once you place the fillet in the pan, leave it undisturbed for 3–4 minutes to form a crispy crust, then flip.
Use a heavy-bottomed skillet
Cast iron or thick-bottomed pans heat evenly and give a better crust.
Cut chicken into even pieces
Try to cut the fillet into pieces of uniform size so they cook at the same rate.
Don't burn the garlic
Add garlic 1–2 minutes before the end to keep it soft and aromatic, not burnt.

HOW TO STORE
How to store fried chicken fillet
Cool the cooked chicken, store in an airtight container in the fridge for up to 2 days. Reheat in a dry skillet for a few minutes or in the microwave. Freezing is not recommended – the texture becomes dry.
